or don’t. i won’t know. (i know mexican is misspelled, is a little inside funny for pathug and lisa)

in an effort to save money (because i had to go to the bank of last resort again) i am making my own tortillas.  i have wanted to this for a while and well it was so easy i am never buying store bought again.  i am really on an if i can make it i will not buy it kick (no more chemicals for this girl, except for those in diet cherry coke).

here is a photo journal of my tortillas:

you have to use masa harina.  i had it from when i was gluten free.  if you move out to the ‘burbs with me i will share mine, if not go buy some.

then you add some water and salt

and get something like this

then you get to roll then in to a ball and use a tortilla press to flatten them.  like this from sur la table.  or if you are poor you can do what i did:

they were too moist (gross word i know) and i need to add more flour.  then they looked like thisi filled them with my filler and CHEESE and they were delicious sooo good.  if you need more direction go here.

since i believe all of you stalk me via twitter i know you saw my back and forth with whitney . where i lamented about not having gluten free croissant.

WELL since apparently i like waking up at 4 am i also spent HOURS yes HOURS before 7 am (because 3 is the same as hours right?) this morning playing and i FOUND a recipe on the in-ter-net. (say is slow like its a revelation)

YES IT CAN BE DONE!  I found this GLUTEN FREE HOMEMADE CROISSANTS.  and YIKES it looks like work but it is a lot of work for these little clouds of heaven.

now, i have a croissant recipe from my julie child cook book and i feel like she rolls over in her grave every time i have to pass it on the book shelf to grab my gluten free cookbook but i miss these little guys so much i am willing to betray my grandma friend, julia, for this recipe. while, i love croissant and pain-au-chocolate SOOOO much i do not love the way they make me feel.  not even enough to cheat on my gluten free life style for just a taste.

so perhaps i will attempt these suckers.  HOWEVER, i am going to wait until i get my labs back from the doctor.

oh, thats right i did not share with you.  i had a doctors appointment yesterday and for the first time in YEARS a doctor took me and all my symptoms seriously.  like all doctors he does not believe i have a gluten intolerance b.c i do not have explosive diarrhea (sorry if your eating breakfast)  but took my other issues seriously and wants to do all this blood work on me.  YES more needle sticks by people who can’t find my veins.

but i digress.

let me tell you a little about me new doctor friend.  he was like 1/3 my size and FOTB from like india or something, and i am still not quite sure what his name is.  we had a little trouble at first and i HATED him until he started to take my issues with gluten seriously.  after that we became BFFs.  then he did what all people do when i have to admit i don’t eat gluten.

DOC: oh you must have hard time eating out
ME: WELL NO SHIT ASSHOLE (haha that is what i thought) i really said: no most places are really accomadating
DOC: yes i saw at panera bread they do not have gluten free menu
ME: YEAH A$$HOLE I NORMALLY DON’T EAT AT PLACES WITH BREAD IN THE TITLE and out outloud i said: yeah i try not to eat at chain restaurants
DOC: shakes head and types into computer for like 5 minutes without looking at me.

all in all i think i will stick with him and not try and find my 5th doctor in like 3 years. i mean i am moving in a few short months, RIGHT???

.so.domestic.

i am like a modern day marvel.  i know that you think the same thing to yourself every day so lets just lay it out here.

This weekend i put my domesticity to use and made a new type of gluten free bread AND HOMEMADE OREOS.  oreos have been a guilty pleasure in my family for as long as i can remember and i must say that after bagels they are the thing i miss the MOST now that i am gluten free.

thanks to a few of my internet/blog friends i was finally given the kick in the a$$ i need to made these!  first, i saw the recipe on gluten free girl and chef.  she bakes in weight so i put it to the side until i got myself a scale (actually Lisa got me a scale and we went cheep and it does not give exact measurements but i digress).  i again saw these suckers pop up over on whit’s amuse bouche. (Side note: whitney also went to miami and is a sorority sister of AMC, so we are like IRL by like 7 degrees of separation).

so now is the time where i put in all the pretty pictures of my bread and cookies right?  WONG.  i still don’t have a camera and don’t want to talk about it.  so i will make you dear reader who i love so much SUFFER along with me and you must now look at pictures i took from my blackberry.

i got the recipe from gluten free cooking school.  there are pros and cons of this bread.  Pro: it had great texture, looks like bread and is easy to make. Con: it tastes like corn, it crumbles easily and is a bit dry.
i will be making it again and adding a little potato flour to try and get some moisture into the bread.  i LOVE the way it rises up and has large air bubles.  it is light and not dense at all.

now is the time for all of you to comment about how you want to by my goods on etsy and the go purchase a coffee hug or some nice stationery.  b.c seriously your enough of an a-hole for waiting this long do you really need to keep killing trees by using those awful horrible UGLY cardboard sleeves.

last week via twitter i promised to share my amazing success with gluten free bread.  well this weekend was way more jam packed then i anticipated and i never got my blog done.

for christmas AMC gave me Artisanal Gluten-Free Cookingi truly feel if you have to get one gluten free cookbook this should be it.  Kelli and Peter (yes we are on a first name basis) spend pages explaining gluten free and then give you their flour mix.  its AMAZING.  i think it is the addition of potato flour.  This was SO hard for me to find and i had to have the local health food store order it for me.  But TOTALLY WORTH IT.

it was from this book that i made my amazing bread.

Right now i am making their pizza crust.  i let the yeast proof a bit to long and it was all over the counter and ON MY BOOK. they made pizza on their blog last friday and you can read all about it over at no gluten no problem.

The other other great thing about this cook book is that it is not all about making your favorite dishes gluten free.  It shows you how to make dishes that have always been gluten free!  along with a WHOLE chapter devoted to drinks!  while the gimlet was not featured a lime rickey was, its like a gimlet for beginners! and a little caveat about the dangers of gluten in alcohol.

if you are gluten free or know someone who is YOU NEED TO GET THIS COOKBOOK NOW!

they are coming out with a cupcake book too.  if you were looking for a valentines day gift THIS IS IT!

.taming.the.beast.

i have been blessed.  i am somewhat of a wiz in the kitchen.  not to toot my own horn by any means but i was giving the baking genes in the family.  from the time i was little i liked to cook and bake.  i can remember leaning how to make grill cheese and pancakes as a child and the joy i felt the first time i ever did it alone.

i can also remember the few failures i have had in the kitchen.  now i am not talking setting the stove on fire (done twice) or burning the handle of a pot, spatula or tray of cookies (countless times) i am talking about throwing out a whole recipe because it was REALLY JUST THAT BAD.  i can only remember doing this twice although for the sake of my memory we will say if happened maybe half a dozen times.

the first time was when i made baking powder biscuits out of my samanatha american girl cook book.  i mistook the teaspoon for the tablespoon and baking soda for baking powder.  i will never forget lisa trying to choke one down.  we through the whole thing out and she explained to me the differences.

the second time was recently when i made a box tiramisu.  why i ever thought this was a good idea will never be clear but lets just say it was HORRIBLE.  ill stick to the home made from now on!

well this was until i became gluten free and started baking…

let me first state that i hold impossibly high standards for myself in the kitchen and will not settle for ok.  this applies to gluten free cooking.  if it does not taste as good or better than the original it is a failure.

cue christmas cookies.

my first batch was doomed from the start.  i just assumed flour is flour what is it made out of does not make a difference… WRONG!  i just subbed in millet flour.  on the label it said good for baking.  well it was the worst taking cookies of my life.  i mean BAD. vomit in your mouth bad.  take a shot of vodka and still not cover the after taste BAD.

this whole batch was tossed.  good news? after learning that you must combine flours i have remade them and they are delightful!

second failure: kolackys

i got this recipe from brittany’s love blog real sustenance. (she also has a recipe for english muffins that i am dieing to make).  brittany’s recipe was gluten free and vegan.  i am not a vegan and well am sorta INLOVE with dairy so i just subbed in my non-vegan products and ran with it.  FAIL.

no this was not the type of fail that causes me to toss a whole batch.  this was the kind that lights the stove on fire.  in her recipe brittany said the dough would be sticking.  well mine was STICKY.

oh why am i talking abut brittnay like we are besties?? BECAUSE we are friends, we e-mailed and tweeted back and forth over my need to perfect my kloackys.

i digress…

i knew there was a problem when i placed my kloackys on a silpat.  genius idea right?  WRONG.  due to the moisture in my cookies they decided to slip off the silpat and fall onto the oven floor.  this caused the oven to smoke, the alarm to go off and poor dusty to exile himself to the snow until i had the issue under control.  out of my frustration with myself for not having perfect kloackys i tweeted Brittany (@realsustenance).  she followed up with the sweetest tweets offering to help me.  i sent her an e-mail detailing my probs and what ingredients i used.  she suggested that i go for it and use full fat cream cheese and ONLY an egg yolk and then went even further and made them again herself to make sure the measurements were correct!

i rolled out the rest of the dough from the original batch between two pieces of plastic b.c even the parchment was causing an issue…

i just whipped up a new batch of dough this  morning and it is in freezer chilling.  the consistency was completely different with this batch.  the funny thing about gluten free cooking is  you have to trust the recipe as most of the time the dough/batter is not what you would have using a wheat flour.  this was another mistake i made with the first batch.  i added sweet rice flour until the dough was what i wanted… result: disaster.

this time they were much better.  i was a bit wary of adding sweet rice flour to the dough but finally found my rythm and the result?  GLORIOUS!

so thank you brittany!  i could not have done it without you!

.snow.day.

today here at happy headquarters we had a snow day.  i took my exam and by the time i came out at 11 there was an inch of snow covering the earth!  i went on to do my errends but after doing two i decided that people in VA do NOT know how to drive and started making my way home.  my drive was 6 miles and took an hour.

i just love this song from the starbucks commercials and have been singing it all day!

when i got home K$ and i started making cookies.  about 6 dozen later, and lisa and thug coming home because of the SNOW, i finally got a second to blog.  my CS5 did arrive but i have not even had a chance to open it!

all of the cookies are full of gluten and i am waiting for the kitchen aid bowl and paddle to get finished in the dishwasher to make kolackys.  while this recipe is both gluten free and vegan i will only be making them gluten free.  kolachys are one of my favorite types of cookie and i cannot wait to try Brittany’s recipe.

.holiday.to.do’s.

this year i get to go to my favorite city at my favorite time of year.  while some people might dread chicago at winter time, I LOVE IT!  and that is exactly where i am heading.

why do i love it?  i think it is rooted back in my early childhood.  while i was born in chicago, i have no memories of it.  we moved to st. louis when i was just a few months old.  however, we have gone back many times and i even moved there for my first job out of college.

christmas eve with my fathers side of the family is an experience.  when we were all younger and my grandparents were still alive it was at there house.  we would all (2 grand parents, their 8 children, and their children no family has less than 3) pack into their small family room, hover close to the ground (the cloud of smoke from my grandfathers lucky strikes was a permanent fixture in the room) and tear into our gifts.  first came the godparent gifts, then the grab bag gifts.  by this time there was noise, paper, and pandemonium.  I have no memories of being at these christmas eves only reminders from pictures and stories.

now that my grandparents are no longer with us, we celebrate at my aunts amazing house in oak park (its like the type of houses you see in movies), there is no cloud of smoke and most of the noise comes from the cousins drinking too much.  thankfully there are still little nuggets, as cousins have now had their own children, who scream for joy when they open their gifts.

we have changed the grab bag a bit and usually end the night at a dive bar reminiscing about the early years, the cloud of smoke and the monster that lived behind grandma’s garage, and the great family jim and jean created.

not only because of my family do i love chicago  the city comes alive at christmas, the white blanket of snow cleanly coves the windy city and brings it back to the city i picture in my mind.  while it can be bitterly cold a quick stop into marshal fields (i will NOT call it macys) and a trip up to the walnut room not only transports you back to a different time when shopping was not something you did on the way home but it was a destination.  no matter how old i am seeing that giant christmas tree brings me the joy that christmas morning once did.  after warming up with a hot toddie, a peppermint (spiked) hot chocolate and a little nosh, one is ready to view the windows.  this is probably the one time in my life when i am able to calmly face any crowd.  i am transfixed every time i see the windows.  i prefer not to know the theme of the windows until i go down to see them.  preferably with a starbucks in hand and snow flakes falling.

this year i am also going to bring a bag full of my own gluten free christmas cookies, as they are tres hard to find and i already know i like them!

After going to college in the midwest and living there for a year a holiday in chicago also means catching up with all my fav people.  on my visit i will be getting together with 2 sorority sisters ( i was lucky enough to see them both when i was in for the marathon) and my housemate HEP (she ran the marathon but i never got to see her), my bestie from Luxembourg JM over at urban explorer, and hopefully KL.  i was suppose to meet up with all of them the monday after the marathon but seeing as i could not walk and had a stress fracture in my hip i had to cancel.

jm and i already have plans to go to zoo lights (at lincoln park zoo) and drink warm drinks, hot toddy’s or peppermint (schnapps) hot chocolate.  hopefully ending the night with a night cap!

BUT before i head out west (if you remember in the great gatsby they refer to the mid west as out west so i think if Fitzgerald could do it so can i!) i have lost to finish here.  today i am hoping to finish my christmas card design in ilustrator (AMC already got a little peak!) and bring it over the the printer.  i also have my first final tonight, so i will be heading to the lib to STUDY soonish.

i also need to try converting my grandma’s spritz cookie recipe to gluten free.  i feel like to do this i really need to follow Shauna James Ahern suggestions and buy a food scale.  i am also going to use a lard butter mixture.  i read an recipe on line from a blog.  i thought i book marked it as i would love to direct you all to it but now i cannot find it anywhere.  if it was you let me know!

alright at 6 minutes to 8 my play time is over.  off to studying.

i did it.

i was in a mood all week and all i wanted to do was bake.  since i am now gluten free (and loving it!) i need to go buy flours and experiment and was just not feeling it.  so i sulked.  finally on Thursday i pulled sh*t together and went on a scavenger hunt.

i first headed to the asia grocery.  i got tons of good stuff and all for $11.  they had sweet rice flour, white rice flour, potato starch, tapioca flour, etc.  the smell was a bit much at first but i reminded myself that it was worth it.  and it was.  i have a special place in my heart for asian people and this was like my meca!  the help was great, they were so helpful!

i then headed to my second favorite gluten free meca, trader joes.  did you know they have a gluten free list, its available at their stores and on line.  i was so sadded to find they were out of Udi’s gluten free bagels but i got bread and brownie mix.  they have stopped producing their gluten free pancakes as the supplier upped the price.  again i had amazing service and also found a new gluten free obsession: tortilla chips- with an identity crisis.  they are SOOOO good.

he also gave me a tip i cannot wait to try.  when frying a gluten free breading use ginger ale instead of water.  it creates a light fluffy coating!

i then headed to The Fresh Market, a sad replacement for a whole foods and found that they really do not carry any gluten free products.  i left angry.  i was dejected again.  i had come so far in my quest for gluten free flour ingredients but still did not have xanthan gum, sorghum flour or teff flour.  i headed to both the food lion and kroger and was futher dissapointed.  k$ sugested we stop by the farm fresh.  i really do not like this grocery but figured after my now 3 hour search it was worth a try.  BINGO: the bob’s red mill mother load

i was able to get everything i needed.

now our second freezer contains a turkey and all of my gluten free flours!

and i was able to make my oatmeal chocolate chip cookies

when making these you have to get the dough to the right consistency.  this is the same issue when making them with non-gluten flour.

here is the cookies without enough flour: so i added more and the dough looked more like this:and gave me perfect cookies looking like this: depending how how you like your cookies you may want to tweak my recipe, i like thick gooey cookies.

special shout out to glutenfreemom whose flour mix for chocolate chip cookies i used in this recipe!

and if you want to make it full of gluten you just need to use regular flour (same amount), no xanthan gum, and 3 cups Quaker instant oats or 2 cups of the non instant rolled oats!

i was bad…AGAIN.

recently i have decided that i will forget about the fact that i am poor and just buy things.  mostly this comes from my addiction to using coupons.  if i have a coupon it causes me physical pain to not use it.  thus i recently bought a new cookbook (its not gluten free)Williams-Sonoma Baking. i have wanted this for forever and well hopefully one day i will get the hang out gluten free flour and be able to make everything again.  until then it will torture me and will look pretty on my shelf.  if you do not own any williams-sonoma cookbooks i suggest you invest in this cookbook along with the baking one.

this is my next cookbook obsession (take note santa!)
and santa if you are feeling really generous maybe some of the tools that are suggested inside!

i also bought some stuff from pixie-chicago.  i got it from the etsy shop with the 40% cyber monday discount, they also have a blog.

i also think that i am heading over to starbucks to use my 15% off coupon that is good on via and mugs etc.  today is the last day and i did just sub in KINDERGARTEN for 2 whole days.  i deserve a little treat!  (and now that mr. match has moved away there is no one to make me feel bad about the quanity of coffee mugs i have).

oh that will also be to make me feel better about the HOURS yes HOURS of work i have to do tonight because it is due at midnight.  i am at 754 of 800 problems that i need to complete for my community college pre-calc class.  if misery had a face it would be this class.  but after tonight all i have left is the final and i am done.
